Not really. With the repeated bloodsucking, Yukina will end up being his blood servants and they stop aging after a certain point. That being said, blood servants still can be killed unlike progenitors.

You're absolutely right, also, if I may, during the battle against the nalakuvera. How is it that humans are able to damage god like weapons that are able to destroy even the progenitors themselves? I just could find it hard to believe they could make such quick work of them. In my opinion, I think that Kojou's true fighting potential was limited because of Himeragi.
Kojou's fighting potential is nil for three reasons:
(1) he's never had any sort of combat/magic training
(2) he doesn't have control over his familiars
(3) his familiars are not suitable for most combat situations
The first two are self-explanatory. The third reason isn't explained in depth in the anime at all. Kojou actively holds back when using his familiars because using them at full power will sink the island. It would be like using a nuke to kill an ant. This compounded with the fact that Kojou doesn't have much control over his familiars anyway makes him almost completely incompetent at fighting. If you think it's bad in the anime, it's way worse in the light novel where Kojou regularly gets roflstomped by humans.
As for humans...you're looking at the exceptions (although...not-so-coincidentally, the exceptions are the recurring characters of the anime). Yukina and Sayaka are unique even among attack mages. Yukina has one of three existing Schneewaltzers, which are known across the world as the trump card of the Lion King Organization. Sayaka has the only working copy of Der Freischütz. This weapon is so overpowered/difficult to use that subsequent mass-produed copies had split into two versions: the sword that Yuiri uses and the bow that Shio uses. Moreover, Yukina is capable of divine possession, which gives her some of the powers of a deity.

In combat situations, Yukina is trying to keep Kojou from fighting as she believes that Kojou using his powers regularly will have him listed as a threat, forcing her to eliminate him (which she doesn't want to do). Also, Kojou is completely useless in most combat situations, so she's trying to keep him from getting hurt.
Outside of combat, her interactions with him are a mix of "notice me, senpai" and spurts of confused jealousy. Yes, it's annoying and at least in the light novel, she recognizes that she's being unusually unpleasant/cross with him for reasons she doesn't understand at first--remember, this is her first crush. Later on, when she internally comes to term with her feelings, her frustrations with Kojou revolve around the fact that (1) he regularly gets turned on by her enough to suck her blood, (2) proceeds to make her pseudo-orgasm, but (3) doesn't really seem to outwardly recognize that those moments are, at the very least, highly intimate. Then he goes and does the same thing to other girls.
Think about it this way: I'm pretty sure you wouldn't exactly be happy to see your love interest get turned on by others and then proceed to make them orgasm even if it isn't "going all the way."
In that regard, Yukina "letting" him suck the blood of other girls and her being good terms with all of them is pretty generous on her part--especially when it comes to Sayaka, who, even after knowing Kojou and Yukina had done and what that means (remember her "don't tell Yukina" statement), literally threw herself at Kojou to get him to suck her blood.
And ditto to what the person above said - Yukina isn't Kojou's observer, Yaze is. Yukina is meant to be his blood partner/wife and her personality was a big reason why she was selected. The "observer" thing was only a pretext to get Kojou and Yukina to spend time with each other and to fool them into thinking whatever relationship that comes out of it is completely organic.
